Raw food chef Matthew Kenney will open a culinary school and restaurant this fall at , one of four new purveyors joining The Market's roster of gourmet grocers.
The menu at Kenney's new restaurant, M.A.K.E., will consist of organic, unprocessed, plant-based foods that are heated below 105 degrees. It's still under construction, but the menu is set to include heirloom tomato lasagna (layers of pistachio pesto with red pepper marinara); kimchee dumplings and sweet corn ravioli (corn-mint pesto, tomato, pepper and herb oil).
"I want to share the lifestyle and enjoyment of raw cuisine with our diners in Los Angeles, where amazing local produce and a clean-living culture already exist," Kenney in a press release.
The chef—who owns and operates OKC in Oklahoma City and In the Raw in Chicago—will also make his West Coast debut with a culinary school for cooks of all skill levels. They'll be able to try their hands at using fancy tools, such as dehydrators, thermal immersion circulators and smokers.
